The farm El Mirador is located outside the town of Timana, in the Huila region of Colombia.
Owned and operated by Luis Figueroa Munoz he has managed to produce stunning lots of coffee by adhering strictly to a systematic harvesting approach.

The cherries are picked every 15 days during the harvest seasons, ensuring only the ripest cherries go to processing and the under-ripe cherries are left to mature more. The cherries are swiftly de pulped in a traditional 3 lane beneficio and fermented afterwards for 24 hours.
Washing follows before being placed on a patio inside a parabolic dryer. 12-15 days of drying and constant care and attention to stop any over fermenting in the lower layers of parchment means that once it has reached an optimum moisture content it is sacked up and stacked on wooden pallets for sampling, cupping and approval.
